Are you ready for April’s Mediterranean meal plan?

Springtime menus naturally call for fresh, lighter fare—and you’ll notice I was especially inspired by the sunny flavor of lemons and lemon zest in these recipes. The sunshine here at home is making me more than ready for refreshing, light flavors. And with the busyness of spring and in honor of National Stress Awareness Month, I am featuring meals that are quick, easy, and stress-free. Think one-pot meals and make-ahead meal prep that makes life just a little simpler. As we journey into this busy season leading up to summer, fresh, unprocessed ingredients and simple cooking techniques help us enjoy nourishing and satisfying meals inspired by the Mediterranean way of eating.
