I've been chatting with friends about it—maybe it’s because Easter was late, or the cooler weather stuck around longer—but whatever the reason, I’m leaning into the fullness of this season by embracing the Mediterranean mindset.
That means finding joy in the midst of the busyness, staying grounded in simple pleasures, and remembering to nurture that ever-important work/life balance. That’s really what this lifestyle is all about—living well, staying present, and enjoying the moment.
And of course, it shows up on our plates, too. When life gets hectic, I find myself returning to Mediterranean basics: fresh, seasonal ingredients, simple cooking methods, and nourishing meals that don’t require fuss to be flavorful. It’s a great reminder that healthy doesn’t have to be complicated—it just has to be thoughtful.

They’re piled high with creamy hummus, cool and tangy tzatziki, and a colorful medley of juicy cherry tomatoes, crisp cucumbers, Kalamata olives, zesty pepperoncini, and chickpeas. Finally, we add crumbles of creamy feta and a generous sprinkle of fresh herbs (think dill, parsley, and mint), bringing it together beautifully.

We are using our favorite fish taco recipe and giving it a fresh twist: tender, flaky fish marinated in warm spices and olive oil for max flavor and heart-healthy goodness. Instead of tortillas, we serve it over a crisp, colorful slaw mix loaded with fiber and crunch, making every bite both satisfying and nourishing.
Greek Meatballs with Mediterranean Quinoa
We love making these Greek Turkey Meatballs—they’re full of bright, zesty flavor from oregano, garlic, and a splash of fresh lemon juice. Plus, they’re so practical: easy to prep ahead for the week and perfect for those extra busy days. Their versatility is another reason they’re a staple in our kitchen. Serve them as a tasty appetizer, or enjoy them as a main dish over a bed of greens, zucchini noodles, or paired with our Mediterranean quinoa salad.
Mediterranean Chopped Orzo Salad
This Mediterranean Chopped Orzo Salad is so beautiful - full of colorful vegetables that invite you to "eat the rainbow." I love this salad as a reminder to incorporate a variety of colorful vegetables in your meals. Eating a variety of colors of vegetables ensures we get all the different vitamins and minerals we need. Crisp Persian cucumbers, juicy tomatoes, sweet bell peppers, tender artichoke hearts, and peppery arugula come together with hearty chickpeas and orzo, all tossed in a tangy-sweet honey balsamic dressing.
