This Mediterranean Chopped Orzo Salad is so beautiful - full of colorful vegetables that invite you to "eat the rainbow." I love this salad as a reminder to incorporate a variety of colorful vegetables in your meals. Eating a variety of colors of vegetables ensures we get all the different vitamins and minerals we need.  Crisp Persian cucumbers, juicy tomatoes, sweet bell peppers, tender artichoke hearts, and peppery arugula come together with hearty chickpeas and orzo, all tossed in a tangy-sweet honey balsamic dressing.

This is a great meatless option, but you can always add your favorite lean protein like grilled chicken or shrimp. Each bite offers a refreshing crunch and a rich blend of flavors, providing a nutrient-packed dish that’s as satisfying as it is wholesome.
