As we gear up for the Big Show — Thanksgiving! — we still need simple, nourishing recipes to carry us through the everyday. November is also National Diabetes Month, a great reminder that the Mediterranean diet isn’t just delicious — it’s one of the best ways to support steady blood sugar and overall well-being.

As we enter this season of gratitude, I’m looking forward to those beloved family recipes that bring comfort and joy. But during the week, I rely on meals I can make ahead, throw together in minutes, and stretch into leftovers. A little prep and a few versatile Mediterranean staples can save time, reduce stress, and leave more space to enjoy what really matters — time with loved ones (or maybe that well earned nap I always seem to dream about!).
