Zoe’s Kitchen Coleslaw (Greek Coleslaw)
One of my all-time favorite coleslaw sides, inspired by the fresh, vibrant flavors of Zoe’s Kitchen (a Houston favorite!). This Greek-style coleslaw—often called lahanosalata—is crisp, tangy, and full of bright Mediterranean flavor. It’s the perfect balance of crunchy cabbage, creamy feta, and a zesty vinaigrette that keeps you coming back for more.
One of the best things about this recipe is how easy it is to make. You can grab a convenient bag of coleslaw mix for a quick shortcut, or shred your own cabbage if you prefer a more homemade touch. Either way, there’s no cooking required—just chop, shake, and toss.
It’s also incredibly versatile. Serve it as a refreshing side dish with grilled meats, fish, or wraps, or turn it into a satisfying main by adding a protein like grilled chicken, chickpeas, or salmon. It’s ideal for meal prep too—this slaw actually gets better as it sits, making it perfect to enjoy throughout the week.
Nutritionally, this coleslaw is a powerhouse. Cabbage is rich in fiber and antioxidants, while extra virgin olive oil provides heart-healthy fats. Combined with fresh herbs and simple ingredients, it’s a nourishing, feel-good dish packed with vitamins and minerals.
