October is here, and hopefully we’re all finding our rhythm this fall! It’s the perfect time to enjoy comforting, nutrient-dense meals with seasonal stars like butternut squash, sweet potatoes, pumpkin, and kale. Even if it’s not “sweater-weather” here in Houston, these fall flavors can help make it easier to get back into a healthy routine.
October is both National Breast Cancer Awareness Month and National Seafood Month - a great reminder to focus on what’s on your plate. Research shows that the Mediterranean Diet may help reduce cancer risk while supporting overall health. Adding seafood at least twice a week protects your heart and brain. By including nutrient-rich fall produce and making mindful choices, you can enjoy the flavors of the season while supporting long-term wellness.
Grilled Salmon with Roasted Sweet Potato Salsa
Salmon is an excellent source of omega-3 fatty acids, a type of fat that is beneficial for both brain and heart health. Serve this simply grilled salmon topped with our Roasted Sweet Potato Salsa topped with eggs for added flavor and nutrients. Sweet potatoes are full of immune-boosting antioxidants, fiber and vitamins and minerals like vitamin A and C.
Pan-Seared Salmon Salad with Butternut Squash, Farro and Pomegranate
Salmon is a great weeknight dinner option because it’s quick to cook and packed with important nutrients. Combining a slightly bitter green like arugula with sweet pomegranates and butternut squash beautifully balances the flavors. If cooking fish at home sounds intimidating, don’t worry, this is the recipe to try!
Healthy Apple Cinnamon Coffee Cake
Nothing says fall like sweet baked apple treat! It is the perfect little cake when you need a casual, easy dessert. Bring it as a treat to a friend, or enjoy a slice as a snack or for breakfast. It checks all my boxes for a great baked good – no fuss, and easy to make with simple pantry ingredients. My mother-in-law’s delicious cake inspired me to make my own Mediterranean version with a little more fiber and heart-healthy ingredients.
Happy Cooking!
