What's In Season- December
December is all about festive recipes and holiday celebrations. Although there’s less homegrown produce this month than in summer, there are still plenty of delicious fruits and vegetables to enjoy!
December produce includes a vibrant array of ingredients, from Brussels sprouts, carrots, and parsnips to citrus fruits and pomegranates. It’s the perfect time for comforting stews, warming soups, and easy, simple weeknight meals that make wonderful leftovers for lunch.
Turkey Kale and White Bean Soup
This soup is both hearty and light with protein from the turkey and beans, fiber from the beans and vegetables, and plenty of flavor all around! One of my favorite things about this soup is the kale. Kale is packed with antioxidants and vitamin C to help build immunity in the cold months and fight diseases throughout the body.
Butternut Squash and Apple Soup
Apples and butternut squash are quintessential fall ingredients that blend beautifully in this soup, bringing both delicious flavor and a powerhouse of nutrients.
One cup of butternut squash provides an impressive 450% of your daily Vitamin A needs and 50% of your daily Vitamin C. Apples are rich in fiber, while onions not only add bold flavor but are also loaded with antioxidants—powerful compounds that help combat inflammation throughout the body.
Happy Cooking!
