Shrimp Saganaki
Shrimp Saganaki has become one of my go-to dishes when I want something cozy and flavorful yet effortless. This one-pot dish is made with pantry staples and comes together quickly with fire-roasted canned tomatoes, spices, and frozen shrimp—things I always have on hand. The shrimp simmers in a rich tomato sauce, soaking up all the bold flavors, and then I finish it off with a generous sprinkle of feta cheese, kalamata olives, lemon zest, and parsley. This is Mediterranean cooking at it best, with its focus on lean protein (shrimp), healthy fats (olive oil and feta), and nutrient-rich vegetables (tomatoes and herbs). It’s the perfect mix of savory, tangy, and a little bit briny. I love serving it with crusty bread or over orzo or brown rice. All you need to add is a green salad, and dinner is complete. It feels like a special meal, yet it’s easy enough for a weeknight and impressive enough to serve to company!
