This is one of my all-time favorite recipes from Ina Garten—her rack of lamb is pure perfection. It’s easy, incredibly flavorful, and turns out beautifully every time—truly an entertainer’s dream.
So, for Easter 2020 (peak COVID era), I decided to make it for my family.
Planning the menu felt extra special that year. Everyone was home, pitching in, and we were determined to make the day feel joyful despite everything going on. I even planned to pick nasturtiums from my mother-in-law’s garden to garnish the lamb. We had online church, a full house, and everything was coming together just right.
Naturally, the camera had to eat first.
I pulled the lamb straight from the oven and set it on our marble slab for its photo moment. What could possibly go wrong?
Well… one small detail I hadn’t mentioned.
In January 2020, we welcomed George Fullenweider—a tiny bundle of golden joy and quite possibly the cutest (and fastest) puppy on earth.
As I gently placed the platter down, George saw his opportunity and made a full-speed dash for the lamb. At the exact same moment, Keith lunged to scoop him up, and I lifted the platter—only to accidentally whack Keith in the head…
…with the lamb.
Yes. The lamb.
In the chaos that followed, the platter—and its beautiful contents—went crashing to the floor, shattered into pieces. My gorgeous Easter lamb: gone. Keith: sitting with an ice pack. Easter lunch: suddenly entrée-less.
But what survived was one perfect photo—and a story we now tell every Easter.
Now, thankfully, with a little more laughter than disappointment.
And honestly, that Easter has become one of my favorite reminders of what this holiday—and the Mediterranean way of eating—is really about.
Not perfection. Not getting everything just right.
But showing up, gathering, and making the most of what’s in front of you—whether that’s a beautifully set table… or takeout after your entrée hits the floor.
Because if you’ve been following along, you know we’ve been talking a lot about consistency lately. And holidays like Easter are where that message really comes to life.
Some years you’re traveling.
Some years you’re hosting.
Some years everything goes according to plan… and some years it really doesn’t.
But one meal doesn’t define your health.
What matters is the rhythm you come back to.
So in this Easter Menu, you’ll see that balance. There are festive dishes, a few treats, fun desserts, and yes—plenty of vegetables.
Enjoy the lamb. Have the dessert. Add the vegetables.
And then, when the holiday is over, you simply return to your routine.
Easter Brunch Recipes
1. Crudités And Your Favorite Spinach Dip
This is a simple way to add in some veggies to the mix. We love a white bean spinach artichoke dip for some added protein and fiber.

You already have your hands full cooking Easter brunch so let Fab Fete do some of the work for you and order one of their delicious Fab Fete Cheese Soufflés. I serve mine with sliced strawberries and a baguette – yum!
3. Country Ham and Biscuits with Jam.
Try these Cheddar and Chive Biscuits and fill with your favorite ham and an apricot or raspberry preserve – we love this one!
4. Hash Brown Egg Nests
I modify this hash brown egg nest recipe slightly by taking out the cheese and using cooking spray to grease the tins. I then spray the hash browns before they go into the oven for the first time.
5. Healthy Carrot Cake Oatmeal Muffins
These healthy carrot cake oatmeal muffins are the perfect springtime breakfast or snack.
6. Strawberry Oat Muffins
These strawberry oat muffins are easy to make and are a simple, low-added sugar option for breakfast or a snack.
7. Spring Farro Salad with Asparagus, Snap Peas and Radishes
This farro recipe is made with some of our favorite spring vegetables and is layered with bright flavors. We love this one for a satisfying lunch or a delicious side dish on your Easter table.
8. Chopped Strawberry Farro Salad with Honey Balsamic Vinaigrette
This refreshing spring salad includes strawberries, a whole grain, healthy fats and fresh spring greens for a balancing, filling meal or side.
9. Blueberry & Kale Farro Salad
This salad is excellent for spring entertaining and impressing company. It’s delicious and packed with so many nutrients.

High in fiber, heart-healthy fats, and vitamin C, serve this versatile dish warm as a hearty main bowl or at room temperature as a stunning side for your holiday table.
11. Shaved Brussels Sprouts Salad with Hard-Boiled Eggs
Made with a base of shaved Brussels sprouts for a delicious crunch, and topped with hard-boiled eggs. This recipe comes together in minutes. It’s a great way to use up those leftover hardboil eggs from Easter.
12. Mediterranean Fruit Salad with Mint
Make your own with your favorite fresh fruit like kiwi, strawberries, clementine slices and pineapple. I love serving mine in a pretty trifle bowl on the table.
13. Coconut Cake
A classic Easter dessert! I grew up with green-dyed jelly beans on top of our cake at Easter time.
14. Olive Oil Lemon Bundt Cake
Another classic for Easter! This is a new favorite cake from America’s Test Kitchen. I love their recipes because they have tried so many different formulas to make the perfect dish or dessert.
