If you’re in Houston, you’ve probably reached the point in summer where opening the front door feels like opening the dishwasher mid-cycle.

As we head into July, watermelon, cucumbers, fresh herbs, and other summer favorites are coming into their peak season. That’s exactly why I keep coming back to this Watermelon Salad with Cucumber, Feta, and Mint. It’s crisp, flavorful, and comes together in just a few minutes with no oven, no stove, and very little effort.
The combination of sweet watermelon, cool cucumber, salty feta, fresh mint, and bright lime tastes like summer on a plate. Serve it at a cookout, bring it to a watch party, or pair it with grilled chicken or fish for an easy weeknight meal.
