Chocolate Pistachio Date Bites
I love this recipe because it feels like a treat, but it’s made with whole, real foods. I’ve been inspired lately by some of the Dubai-style pistachio and dark chocolate desserts. And then there are these dark chocolate chip and pistachio cookies with a hint of sea salt, a sweet treat for sure, I keep thinking about. That flavor combination is hard to beat.
So I wanted to come up with a treat and “make it Mediterranean,” and these delicious bites were the result.
Dates provide natural sweetness and fiber, pistachios add heart-healthy fats and plant-based protein, and cocoa adds deep chocolate flavor and antioxidants. There’s no baking required, and they come together in minutes in the food processor — making them perfect for busy weeks, entertaining, or a simple after-dinner bite.
You can keep them simple, roll them in chopped pistachios for extra crunch, or dip them in dark chocolate with a sprinkle of flaky sea salt for a more decadent finish. However you serve them, they’re a satisfying, Mediterranean-inspired sweet .
Store them in the refrigerator for an easy grab-and-go snack, or keep a batch in the freezer so you always have something wholesome on hand whenever a chocolate craving hits.
