Hello, easy entertaining!

I get asked all the time for a go-to entertaining recipe that feels special but doesn’t require hours in the kitchen. If you haven’t tried Chicken Marbella, this is your answer.

This classic recipe originally appeared in one of my favorite cookbooks, The Silver Palate Cookbook, and it has been one of my favorite entertaining dishes ever since. It’s timeless for a reason.

The marinade combines olive oil, olives, capers, garlic, and warm spices to create an incredible depth of flavor. Not only does it taste amazing, but many of those ingredients — especially olive oil and spices — offer anti-inflammatory benefits. The sweetness of the prunes paired with the briny olives and capers is so delicious. Sweet, savory, and just a little tangy.

And the best part? You can prepare it the night before and simply pop it in the oven before your guests arrive. How easy is that?

Serve it with a lovely green salad and some crusty bread, and dinner is done.

One of the things I love most about the Mediterranean way of eating is its abundant use of flavorful herbs, spices, and ingredients, always proving that eating nutritious foods does not have to be boring.
