It’s high-protein, naturally gluten-free, and satisfying without feeling heavy.
And here’s the real magic — you can make it completely ahead of time. Bake it the night before a brunch. Or make it on Sunday, and you’ve got breakfast or an easy lunch covered all week. And it is incredibly versatile too - use any vegetable combination you have on hand. It keeps in the refrigerator for up to 5 days and freezes for up to a month.
