This crustless quiche has become one of my favorite recipes for effortless entertaining — and honestly, for any day of the week. We’ve given it a Mediterranean makeover: more broccoli and sweet caramelized onions, less cheese, lean Canadian bacon, and good olive oil building flavor alongside Dijon mustard and nutmeg. It’s high-protein, naturally gluten-free, and satisfying without feeling heavy.

And here’s the real magic — you can make it completely ahead of time. Bake it the night before a brunch. Or make it on Sunday, and you’ve got breakfast or an easy lunch covered all week. And it is incredibly versatile too - use any vegetable combination you have on hand. It keeps in the refrigerator for up to 5 days and freezes for up to a month.
