Are you looking to add more fish to your weekly rotation but intimidated by cooking fish? This beautiful, easy, slow, slow-roasted salmon is just for you!  The slow-roasting process makes it difficult to overcook the salmon, enhancing its natural richness and making it incredibly moist and flaky.

We paired it with a classic Italian salsa verde to add a bright, zesty herby flavor. The Italian salsa verde, not to be mistaken for the Mexican salsa verde, is made with fresh parsley, basil, capers, lemon, red pepper flakes, and olive oil.  Enjoy the leftover salsa verde on chicken, eggs, roasted veggies, and more.  Packed with antioxidants and healthy fats, this dish is a flavorful and nourishing choice for a wholesome meal. Serve over farro, brown rice, or quinoa.
